Angus Beef Mini Burgers and everything you'll need to plan a fabulous football party.
As Seen on the Pizza and Cocktails episode with Perry Smith of Matchbox Vintage Pizza Bistro
9 one ounce Brioche buns (you could also use mini Hawaiian Rolls)
18 ounces of Angus beef
9 pickle slices
Salt and Pepper
Melted Unsalted Butter
9 small slices of cheddar or other cheese
Pat the beef into 9 two ounce patties and season with salt and pepper. Heat a large skillet or indoor grill to medium-high heat. Place mini-burger on the grill and cook for four minutes. Flip the burger and put the slices of cheese on top cook for another three minutes. (You may have to do this in two rounds depending on the size of your grill pan.) Slice the buns in half and brush them with melted butter. Toast them under the broiler until golden. Place the bottoms of the toasted buns onto the plate and top with the pickle, burger and top half of the bun. Brush the tops of the buns with butter and serve with your favorite condiments.
